Torelló indicates the date of disgorgement in its Corpinnat bottles

Disgorgement is the last action that takes place in the process of making a quality sparkling wine produced by the traditional method. It consists of extracting the yeasts, or lees, that remain inside the bottle after having made the second fermentation.

After the fermentation and aging of the sparkling wines, the yeasts that remain inside the bottle must be extracted, in order to make the wines clean and transparent before launching them to the market. Through the process of removal, the yeasts are transported by gravity to the neck of the bottle and with the disgorgement it will be uncovered to expel those remaining yeasts. Then proceed to add the expedition liquor (if needed) and place the traditional cork.

From few months ago, Torello incorporates the date of disgorgement on the back labels, indicating month and year. This is intended to give more information to the consumer. After the disgorgement and subsequent corking, it is necessary that the sparkling wine recover -for a period of not less than three months- from the abrupt act of uncovering the bottles after years growing up in the tranquility of the cellar. During this time, the carbon dioxide and the expedition liquor will be integrated, in case it was added. Torello has been dedicated for decades to the elaboration of long aging sparkling wines and we understand that the later evolution in the bottle after the disgorgement is totally recommendable. Our sparkling wines are prepared for this, since they were made with base wines with great aging capacity and, after disgorgement, they will gain in complexity.

Pàl·lids, potents o amb bombolles, un rosat per a cada moment

Fa una mica mes d’una decada en els cellers Torello vam comencar a elaborar el que seria el nostre primer vi rosat. El Petjades, un 100% merlot de pujat color vermell cirera, aviat es va fer un lloc en el mercat, gracies a les seves aromes a fruits vermells, complexitat i equilibri. Un any mes tard, el 2007, va arribar el Torello Rose Reserva, pels amants de les bombolles. Un escumos amb dos anys de crianca, fresc, llaminer, amb records de fruites vermelles i morades i tocs balsamics.

Despres de diversos anys gaudint la parella de rosats, el 2014 els germans De la Rosa Torello vam decidir atrevir-nos amb un tercer, l’elegant escumos Pal·lid Reserva, aquesta vegada d’un seductor color rosa pal·lid -tendencia que acabaria calant entre els winelovers de tot el mon-. El cicle es va completar dos anys despres, sumant el 2016 una quart rosat a les creacions. Va neixer el Rosa d’Abril, un vi fresc i aromatic, amb notes florals propies del mes que porta el seu nom. 

Amb el bon temps arriba tambe el moment de gaudir com mai de vins frescos, lleugers i afruitats. A Torello tenim clar que es el moment dels rosats i per a aixo us acosten les nostres quatre propostes, capaces de satisfer els gustos mes exigents i estivals que existeixin.

Pales, powerfuls or with bubbles, a rosé for every moment

A little more than a decade ago, in Torello we began to elaborate what would be our first rose wine. Petjades, a 100% merlot with a cherry pink colour that soon got a place in the market, thanks to its aromas of red fruits, complexity and balance. A year later, in 2007, Torello Rose Reserva arrived, for lovers of bubbles. A sparkling wine with two years of aging, fresh, sweet, with memories of red and purple fruits and balsamic hints.

After several years enjoying our rose couple, in 2014 De la Rosa Torello brothers decided to dare with a third, the elegant Sparkling Pal·lid Reserva, this time a seductive pale rose -trend which would end catching up the winelovers of all around the world-. The cycle was completed two years later, adding a fourth rose to our creations in 2016. The Rosa d’Abril was born, a fresh and aromatic wine, with floral notes typical of the month that bears its name.

With the good weather, it is also time to enjoy the fresh, light and fruity wines. In Torello we see it clear, it’s roses time. For this we approach our four proposals, able to satisfy the most demanding and summer tastes that exist.

Little friends

One of the samples of the great biodiversity that we have in Can Marti state, is the number of different friends that we meet when we walk through the vineyards. Today we crossed paths with this little shrew, and we were lucky to see it, because they are the smallest mammals that exist. Small yes, but active, because they don’t stop moving, neither by night nor by day! They eat insects and because of their fast metabolism, they have to feed constantly.

These cute animals are one more part of that natural ecosystem that we are lucky to have in our state. In Torello we not only believe in sustainable agriculture, we also try to develop practices that help the recovery of species typical of where we are located, both animals and plants. Next to the vineyards, the flora and fauna are part of our wealth and we must know how to pamper them, value them and enjoy them.

Pequeñas amigas

Una de las muestras de la gran biodiversidad que tenemos en la finca de Can Marti, es la cantidad de amiguitos diferentes con los que nos encontramos cuando paseamos por las viñas. Hoy nos hemos cruzado con esta pequeña musaraña y casi ha sido una suerte verla, ya que son los mamiferos mas pequeños que existen. Eso si, pequeños pero activos, porque no dejan de moverse ¡ni de noche ni de dia! Comen insectos y debido a su rapido metabolismo, tienen que alimentarse constantemente.

Estos simpaticos animalitos, son una parte mas de ese ecosistema natural con el que tenemos la suerte de contar en nuestra finca. En Torello no solo creemos en la agricultura sostenible, sino que intentamos llevar a cabo practicas que ayudan a la recuperacion de especies propias del entorno en el que estamos, tanto animales como vegetales. Junto a las viñas, la flora y la fauna son parte de nuestra riqueza y eso hay que saber mimarlo, valorarlo y disfrutarlo.
